In 1976, a Cape Town fish and chips shop owner improvised a meal for his hardworking staff by layering “slap chips”, polony, and achar on a sizable Portuguese roll. Inspired by the movie “The Great Gatsby” a worker dubbed it the “Gatsby smash sandwich” and the name stuck.
